This Easter we are spending the long weekend on the maintenance wharf doing repairs and painting the topsides on the boat. Doing long days sanding,welding and painting we are hungry at the end of the day but don’t want to muck around too much for dinner. All of this meal was cooked on the bbq. It took about 15minutes to prepare including the fresh breadcrumb, herb and lime stuffing ( that was excellent). The Spatchcock took about 45mins on the bbq and was beautifully moist. The potato, onion and carrot go in with the bird and the asparagus and mushroom 7-8 min before the birds are done.I made a pepper gravy to go with it all. Easy! the bbq does all the work while you have a rum.
