With Paula out for the night at her platform diving class I have been forced to start the Thursday Night Dinner Club. I call it a club so it doesn’t seem so tragic cooking for just myself. Tonights fare is Bacon and Pork Lasagne. Basically just traditional pork mince sauce with my home made bechamel sauce and rashers and slices of bacon. Club members rated it pretty good but did note there is quite a lot left over and it may have to be tomorrows lunch.

Just another quick weekday dinner. I had a pack of fresh fettucine so made a chicken and vege pasta. I used broccolini, carrot mushroom and sundried tomato.
It has been brought to my attention that we eat a lot of curries. I have to say i do like a curry, well all curries. Anyway, here is a non curry. It is a Chicken, zucchini, and pumpkin pasta and it was pretty good.
Here’s a quick solution when you can’t be bothered or have little time. A pack of smoked salmon, peeled strips of zucchini some sliced cherry tomatoes and a nice garlic cream sauce. Top with a drizzle of Avo oil and you are done.
I don’t always eat meatballs, but when I do they are stuffed! Well that’s not true either but these ones were. I stuffed them with bocconcini cheese. I served them on fettucine with a tomato herb and red wine sauce…bellisimo.
