Long day, late finish quick dinner needed. I had a Pork Fillet in the fridge so that was the protein taken care of now the veg. A while ago I was bought a veg turner. I grabbed that, a carrot, a zucchini, and a couple of small potatoes and turned the veges to make spiral linguini. I made a white wine garlic cream reduction and added the veg just before the sauce was ready (3-4mins) and viola vegetable linguini. Top with medallions of the succulent pork and some fresh parsley and you could be in Tuscany.
