At least dinner was good, my team lost the grand final though. Needed a quick meal for grand final night so I didn’t miss too much of the game. This was the answer. It Is Smoked Ocean Trout Papperdelle. I cheated and used fresh bought pasta but made my own sauce and fillings. It’s just a cream reduction with garlic, S&P, thinly sliced red onion, peeled tomato dice and chopped capers. The green is baby spinach leaves that you add moments prior to serving, just enough to have them wilt and soften. And top it all off with grated fresh parmesan and a dollop of Creme Fraiche. The crusty tiger bread was the perfect addition too.
