As previously and regularly noted I DO like Pork Belly. Today my butcher had it bone in, the first time I have come across it that way. As with most meats cooked on the bone is just somehow better. Not only that once you eat the top layers you are left with pork ribs… does it get any better? Crackling, succulent pork and then a bone to chew on, arrrrrggggghhhhhh, drools down chin without noticing. I served it with sides of Potato Curls and Honey, Soy, Sesame, Ginger Buk Choy.
