Chicken Mango Curry

june2013_30Mild curries are not usually my thing, I like skin searing vindaloos or spicy Thai dishes but Paula is not so keen on the hotter ones I make. I made this one for her (and me) its a Chicken and Mango Curry. Still a little spicy but mild enough for even the novice curry eater. I used chicken thighs as they are much more flavoursome and become soft and tender when slow cooked.
