Paula’s new favourite pasta. She wanted a pasta without a lot of sauce and lighter eating, so I made her this one. It’s Bacon and Chorizo, with sundried tomato, kalamata olives, mushroom and asparagus. The sauce is olive oil, red wine and canned diced tomato all in conservative quantity, just enough to wet and coat the ingredients and of course the usual suspects such as garlic, salt, cracked pepper and Italian herbs.
