This is another of my favourite pork cuts, Pork Fillet. Just pan fry until nice and caramalised and still moist and juicy inside and then slice into medallions for serving. On this occasion I have topped it with caramalised mango in ginger and sweet soy sauce and with some nice fresh broccoli and carrots and served the pork on mashed potato. Quick simple and succulent. Don’t over cook the fillet as it is very lean and will dry out quickly if cooked to long or hard.
