These are really good and easy to make. Its Moroccan Chicken Skewers with vegetable salsa on jeweled cous cous w/ minted yoghurt. Use chicken tenderloins or strips of breast, but keep them thick to avoid drying out sprinkle with Moroccan seasoning and pan fry until just cooked. before doing that large dice a mix of favourite veg and saute until just firm then add crushed tomatoes, garlic, S&P, and 2 tsps of the Moroccan seasoning. Cook off some cous cous and stir through tiny dice of same veg as in sauce and some fresh ginger. Garnish with the minted yoghurt and you are done.
