In a Pickle…

After pickling some veges for sushi today I had some of the pickling liquid left over. I didn’t want to just chuck it so I finely sliced some ginger, peeled thins of carrot , chopped an onion into slivers, finely chopped one birds eye chilli and cut three pineapple rings into small wedges. Whacked it all in to pot with the liquid and reduced to a marmalade consistency.
It is really unusual and sweet and spicy. Not sure what it will go with.
